1. do you mean 17x9.5? or do you really mean 17x19.5, cuz thats slightly hard to find.
2. rubbing depends on the offset and the presence of body modification, or lack thereof.
3. thats some big tires.

You can definitely fit a 275 in a stock s14, just have to get the right conservative offset. A tire of this width would be for a car with power for drag or grip purposes. If you are trying to drift, you will need quite a bit of power and speed to compensate. I fit a 275 on an 18x10 with only rolled fenders which is easy.
It should also be noted that different brand tires can be pretty dramatically different widths for the same "275" size. Upto a half inch variance from one extreme to the other.

245 at a stock or +-5 offset is more than enough grip and only requires a mild fender roll only if you have an extreme drop. A 275 is going to suck up so much power, it's not worth it. No drifting with that tire, only straight line and you'd better be starting at at least 350HP to roll them without cascading drivetrain damage and even then, you'd better have some beefy pieces underneath.
My 400HP (stock) cars here only run on 265 rears (by design and that's important!)
The only things that go above that are the AWD Lambos (295 on a Gallardo (525HP) Rear and 335s on the Murci (600 stock HP)) and even then the fronts are only at 235 and 245 respectively.

Our Falken RT615 is like that too, the 225 is actually 245, and our 255 should be rated 275. But hey, if Cooper can do it, so can we.
